Vegan Peanut Butter Cup Cookies

This delicious and classic holiday cookie is made vegan and gluten free, and can even be made nut-free to make it a treat everyone can enjoy!

Ingredients

  • Vegan mini peanut butter cups – I used Free2b sunflower butter cups which have a similar taste as Reeses cups, but are allergen friendly!
  • Dairy free butter
  • Creamy Peanut butter (or use sunflower butter for peanut-free version)
  • Cane sugar
  • Brown sugar
  • Ground flax to make flax egg
  • Vanilla extract
  • Salt
  • Gluten free 1:1 all purpose flour

Ingredients

  • 1/2 cup Dairy free butter (1 stick)

  • 1/2 cup Peanut butter

  • 1/2 cup Cane sugar

  • 1/2 cup Brown sugar

  • 1 tbsp Ground flax

  • 3 tbsp warm water

  • 1/2 tsp Vanilla extract

  • 3/4 tsp Baking soda

  • 1/2 tsp Salt

  • 1 1/2 cup Gluten free 1:1 baking flour

  • 30 Mini peanut butter cups

Directions

  • Pre-heat oven to 375 degrees F.
  • In a small bowl, combine the ground flax and warm water. Stir, and let sit for 10 minutes.
  • In a large mixing bowl, combine the melted butter, peanut butter, sugar and brown sugar. Beat until smooth. Then, add in the flax mixture, vanilla and salt and beat until combined.
  • Then, add in the flour and baking soda and mix until combined.
  • Roll dough into 1″ balls and place in mini muffin tin. Bake in oven approximately 8-10 minutes or until lightly browned.
  • While the cookies are in the oven, remove any wrappers from your mini peanut butter cups.
  • Once the cookies are done, immediately press peanut butter cups into the center. Let cool at least 20 minutes then remove using a toothpick or fork and place on cooling wrack.
  • Optional: Top cookies with festive sprinkles while top of peanut butter cups are slightly melted and still cooling.
  • Place leftovers in an airtight container and enjoy for 3-5 days.

Notes

  • If you are making a nut-free version using the Free2b cups, use sunflower butter instead of peanut butter, and make sure that the other ingredients you use such as dairy free butter and flour are nut-free and allergen safe.
