  1. First, add all ingredients (except toppings) to a blender.
  2. Blend until smooth.
  3. Scoop the mixture into a ramekin or oven safe single serve dish.
  4. Cut a peach in half, cutting one half into small cubes and the other half in slices. Fold in the cubes.
  5. Top with sliced peaches and sprinkle cinnamon generously. Bake for 30-35 minutes at 350 F.
  6. Serve warm topping with vegan yogurt, granola or other toppings as desired.

  • 1/2 cup Protein oats

  • 1/3 cup Soy milk, unsweetened

  • 1 Tbsp Milled flaxseed

  • 1/4 tsp Baking powder

  • Cinnamon

  • 1/2 Tbsp Coconut sugar

  • 1/2 Tbsp Almond butter, creamy

  • 1/2 Tbsp Maple syrup

  • 1/2 tsp Vanilla extract

  • Toppings
  • 1 Small peach

  • Vegan greek yogurt

  • Granola

  • Vegan vanilla ice cream (if eating as dessert)

Directions

  • Pre-heat oven to 350 degrees F.
  • Add protein oats, soy milk, milled flaxseed, baking powder, a dash of cinnamon, coconut sugar, almond butter, maple syrup and vanilla extract to a blender and blend until smooth.
  • Scoop the mixture into a ramekin or oven safe single serve dish.
  • Cut a peach in half, cutting one half into small cubes and the other half in slices.
  • Fold in the cubes and lay the sliced peaches on top in a circular pattern as shown. Bake for 30-35 minutes, or until the top is golden brown.
  • Serve warm topping with vegan yogurt or desired toppings and enjoy.

Notes

  • With using Bob Red Mill’s Protein Oats this recipe yields approximately 500 kcal and 22g of protein per serving before any toppings are added. Vegan greek yogurt will add even more protein to this dish. Macros will fluctuate based on brands used.
